Ingredients

  • 2/3 cup [62g] Almond Flour

  • 1/3 cup [65g] Erythritol

  • 3 Tablespoons [30g] Dark Chocolate (85%), chopped

  • 2 1/2 Tablespoons Butter

  • 1 Large Egg

  • 3 1/2 Tablespoons Unsweetened Cocoa Powder

  • 1/2 Teaspoon Baking Powder

  • 1 Teaspoon Vanilla Extract

  • Pinch of Himalayan Salt

How To Make

  1. Preheat the oven: Set the oven to 160°C (325°F) and line a baking sheet with parchment paper.

  2. Melt the chocolate and butter: Over low heat or in the microwave, melt the butter with half of the chopped dark chocolate to create a smooth sauce. Allow it to cool to room temperature.

  3. Whisk the egg: In a small bowl, whisk the egg until the yolk and white are fully combined.

  4. Combine the wet ingredients: Add the whisked egg and vanilla extract to the cooled chocolate mixture, stirring until well mixed.

  5. Mix in the dry ingredients: Stir in the almond flour, erythritol, cocoa powder, baking powder, and salt until a thick dough forms. Save some chopped chocolate for topping.

  6. Shape the cookies: Form 11 cookies from the dough and place them on the prepared baking sheet. Sprinkle the reserved chopped chocolate on top of each cookie.

  7. Bake the cookies: Bake for 8-10 minutes. Once done, remove the cookies from the oven and allow them to cool until firm.
