Ingredients

  • ¾ cup (110g) Dates, pitted

  • 1–2 Tablespoons (15–30g) Peanut Butter, chunky or smoothe

  • A pinch of Salt

  • ⅓ cup (40g) Oat Flour

  • ½ cup (60g) Peanuts, salted

  • 3.5 oz (100g) 85% Dark Chocolate

How To Make

  1. Soften the dates: Place dates in a bowl and cover with hot water. Let sit for 5–7 minutes, then drain.

  2. Make the nougat: In a blender or food processor, combine softened dates, peanut butter, and a pinch of salt. Blend until a thick, sticky dough forms.

  3. Separate the base: Scoop out about 60% of the mixture and set aside for the base layer. Leave the rest in the blender.

  4. Add oat flour: To the remaining mixture in the blender, add oat flour. Blend until smooth. If the mixture feels too soft, add a bit more flour.

  5. Form the base: Press the larger portion of the nougat mixture into a rectangle, about 1 inch thick.

  6. Add the top layer: Spread the smaller, flour-enriched portion evenly over the base.

  7. Add peanuts: Gently press salted peanuts into the top layer.

  8. Freeze the bars: Place the whole slab in the freezer for 30 minutes to firm up.

  9. Prepare the chocolate: Melt 85% dark chocolate in a double boiler or microwave in short bursts.

  10. Coat and chill: Slice the chilled slab into 8 bars. Dip or pour melted chocolate over each bar. Refrigerate for 30–40 minutes until set.
